Sundays with PB Pancakes & Sur La Table.
This Sunday was stay home sunday (morning). Both K and I were probably too tired to drag ourselves out this weekend morning, K was recovering from her cough and we were resting ourselves well for the busy upcoming weeks ahead. I honestly cannot wait. So, late Sunday homemade brunch: French press coffee, peanut butter pancakes, bacon and rosti, K and I love love loveeee these pancakes so much. Yea I know, I can feel those calories stuck to my ribs. But what is life without these? One of the best Sundays. I mentioned the other time about Alexandria being a bicycle friendly community, so being me, which I cannot really laze around all day especially when my days here are limited, I went on a trip to explore my neighbourhood and to self-renting bicycles stations, called the Capital Bike Share (which has stations that run all around Virginia and D.C, so I can rent a bike here and return at another station) to rent a bike, but came to realise that I need my credit card in order to make payment and I didn't bring it with me... solo cycling trip canceled. Was all geared up and ready to cycle to Arlington National Cemetery and other historical sights.. what a bummer! Anyway, will definitely try it again the next time & I like that they have bike lanes for cyclist by the roads, wish we have it back home too!
Oh and if you ever been to Sur La Table (pronounced as suri-la-tab) here in the States, which is my very first time hearing about it, this place is heaven on Earth. Everyone who knows me knows that I go head over heels with kitchenwares, cake stands, cheese boards, and coffee cups, and oh boy did I let out a teeny wheeeny scream which prolly just sipped through my teeth when I first step into the place. Here, I'll show you what I mean.
Aren't they AWESOME? Part of my job is to spend money on these, and they are so going to worth every penny. It was the last weekend of summer, and the temperature of the days ahead will only go down, growing my entire life (till date) up in Singapore (which is summer all year round) definitely got me so excited for Fall, it is so perfect, I love this weather so much; just a little chilly at times but a good hoodie will do the trick (which I found a perfect one at Target). Heading to North Carolina over this weekend, on my very first road trip to the mountains! I cannot explain the anxiety in me.
Chocolate Chips Peanut Butter Pancakes
(Makes about six 6" pancakes)
Ingredients
1 cup all-purpose flour
2 tsp baking powder
2 tbsp sugar/ light brown sugar
1/4 salt
1 large egg
1 cup milk (more milk if the batter is too sticky/ dry)
1/4 cup Peanut Butter (Exclude if making plain basic pancakes)
1/3 Chocolate chips (Optional)
Cooking spray
Directions
In a large mixing bowl, mix flour, baking powder, sugar and salt together, whisk them well. In another bowl, melt the peanut butter, combine with milk and eggs. Stir in Chocolate chips if using.
Heat up frying pan to medium heat, spray the cooking spray and scoop 1/4 cup of batter at a time. Cook about 3 minutes on one side or when bubbles from the batter ceased to pop, flip to the other side and cook for about 1 minute. Stack 'em tall and drizzle some extra PB!
