Comfort Pumpkin Cauliflower Soup
It's kind of ashamed saying this but I have never really made a proper bowl of soup, the last one was a mushroom cream base soup I did for fatty's birthday..3 years back. I didn't have a hand held mixer back then so I considered it to be 'incomplete' though the taste was great, having it mixed would be perfect! I made with Jamie Oliver's Real Mushroom Soup..time to make it again now that I have done the grand opening for my handheld mixer! I love, LOVE thick creamy soups, other than that, a sweet pumpkin soup would do the trick as well! This soup speaks for itself, do not need much exaggerated seasonings; only 5 easy ingredients, I believe most households would have them on a daily basis.
To side track a little.. the past week has been extremely tiring yet fulfilling, I ended my weekends with 2 wedding events, one of which happened at Shangri-La where I did the dessert table for Ryan and Jocelyn, a couple which approached me during February and the fruits finally bear last Saturday night :*) (You could head over to http://www.thecakeissue.com/dessert-tables.html for more pictures of it) People tend to always see the glamorous side of the outlay (the dessert table) but can never understand all the hard work behind it, baking, storing, delivery, setting up and packing up, time taken...the list goes on. Imagine all these on one lady (me) and my occasional helpers for the event (if I'm lucky enough that friends are free and willing to work part time for me on event basis). I think its time for my body to rest and no more dessert tables until.. before I leave SG for a period of time. So sorry about this heartbreaking news!!
The other was at Grand Copthorne Waterfront Hotel where fatty's friends from Secondary School tied a knot! Aww at the videos that were shown during the wedding dinner, it makes people want to get married..hahaha I'm kidding, definitely not me for now! Indeed it is touching listening to their Thank You speeches because these couples speak their heart of gratitude towards their family and their partners, also on the point where they bring out the best of each other, made the decision to live together and vow to be there for each other for the rest of their lives. :')
Okay I really like to move away from the main point.. This soup should be the highlight! If you're like me, who loves simple yet hearty meals, this is definitely top on the list soup you should try. All you have to do is to throw all in and make it boil then simmer, I think it goes the same for more soups. In addition, pumpkins are rich in antioxidants, has the highest amount of potassium which helps in post workout muscle recovery among most fruits and vegetables and Vitamin A - which aids healthier eyesight and glowing skin. Superfood it is!!!
I shall explore more because this soup triggered my curiosity in making more soups :p Any ideas or recommendation of soups you guys would like to see? Drop me a comment if you'd like to see any food/ beverages/ soups you have in mind!! I would love to try them.

Comfort Pumpkin Cauliflower Soup
(Feeds 3-4 pax)
Ingredients
1/2 cauliflower head (About half of a 7" in diameter cauliflower head)
1/4 of a huge pumpkin
1 sweet onion, diced
1 clove of garlic, diced
3 cups of drinking water
Olive oil (For drizzling)
Directions
Prepare cauliflower:
Preheat your oven to 200 deg. cel and placed your cauliflower (all cut to about 2" in size), drizzle olive oil all over them and bake for about 20 minutes. Do not need to flip them.
Cook soup base:
Remove seeds from pumpkin's heart and cut them to about 1" cube each.
In a large cooking pot, throw in drinking water, sweet onion, garlic and pumpkin cubes.
Cook to boil, then simmer until pumpkin turns soft and tender. When pumpkin has turned soft, throw in cooked cauliflower and divide soup into 2 parts. With a handheld blender, blend up 1 part of the soup till everything is mixed, then pour in the 2nd part of the soup. Give it a good mix and add salt & pepper to taste.
