Fried Salmon Couscous.
Nothing beats home cooked food. I always treasure the times where I can quietly stay at home and whip up some simple meals for myself, I get to add whatever I need according to my cravings. Here's one of my favourites at the moment!
What is couscous and is it healthy?
I have found a few sources online, but I'm not sure the extend of truth in it, but most of the sources I read, the reviews are positive, here are some:

Is it healthy?

How to cook couscous:
Couscous is REALLY simple to cook! it takes you only 5 minutes and it gives a super light and fluffy texture, I love it how the soya sauce in this dish makes it taste like chicken rice (yay!!)

Fried Salmon Couscous
(Feeds 1 pax)
Ingredients
1 - 2 stripes of Salmon (cut into cubes, then marinate with soya sauce)
Bell peppers (cut into small cubes, pictured above)
Broccoli (a few florets)
1 tsp of olive Oil
1/4 cup of Couscous
1/4 cup +1/8 cup of water
Soya sauce (for marinating and to taste)
Directions
- Boil the water, cook couscous according to the link above.
- Meanwhile, during the 5 minutes when the couscous is cooking, start frying the bell peppers and broccoli with a drizzle of olive oil.
- Stir fry for a minute or so, then add in the marinated salmon, when its almost half cooked, the couscous should be ready, fluff it up as shown in the video and then pour it into your frying pan.
- Depending on your preference, you may add a little more, about maybe a tsp of soya sauce for extra flavour, but it also depends on how much you put in your marinated salmon. Test for taste after mixing them together.
- Mix them well, and put them into a plate, start enjoying!
I love how it tastes like chicken rice..but its so healthy & fluffy! and it has got my favourite salmon. What's not to love about this? By the way, some thing to take note, some may not like the taste of bell peppers, you can try garlic if you like, or nothing, I'm pretty sure it will taste good too!
