Pumpkin Pancakes, Happy Halloween!

Adding on to another 'first times', first Halloween away from home! Halloween back home wasn't much an occasion to celebrate, I don't party so forget about the fanciful costumes. They really look cool though, maybe someday! Friday looks good to be a Halloween night because there's no work tomorrow. Something I noticed different from home about halloween here is everyone started to decorate their houses with spooky stuff and so did my neighbourhood. It's like the colours of Fall just blends in perfectly into the atmosphere. Almost every houses have humongously HUGE pumpkins outside their doors, didn't have the chance to visit a pumpkin patch while I was in North Carolina. I really love this place! "Trick or Treat" - a halloween tradition I never heard of (?!) because Kristen told me this is ALL halloween is about. I feel so silly! Children will go around houses with a basket of threats and ask for a candy or sweet treat, so drivers driving around here tonight has to be extra careful because kids will be everywhere. Maggie was saying, 'its not too late for you to be a kid now, I can give you sweets, I have some upstairs ;)' oh boy! haha. 

Going home these few days is feeling more emotional as the time spent here is shortening everyday. Even leaves moving in the direction of wind seems like they're waving goodbye to me, oh well. I hope I can find something to cure myself from this wave of unstable emotions. True traveling blues. Falling in love with the streets and my neighbourhood over and over again. Happy Halloween everyone! 

Pumpkin Pancakes
(Makes about 8 5 inches pancakes)

Ingredients

1 cup buttermilk (3/4 cup of milk+ 1/4 cup greek yogurt & let leave it for 10 minutes)
1/2 cup pumpkin puree
1 egg
1.5 tablespoons unsalted butter, melted and cooled 
1 teaspoons pure vanilla extract
1 1/4 cups all-purpose flour
1/4 cup granulated sugar
1/2 tablespoon baking powder
1/4 teaspoon baking soda
1 teaspoon spice (any spice you'd like)
1/4 teaspoon salt

Directions

In a large mixing bowl, add buttermilk, then egg, pumpkin puree and melted butter. Whisk it well. 
In a separate bowl, do the dry ingredients. AP flour, sugar, baking powder, baking soda, spice if using and salt.

Do it the good ol' way, make a well in the dry ingredients and adding wet into the dry ingredients, keep whisking until incorporated, do not over mix. 

Allow the batter to rest for about 5 minutes. 

Set frying pan over medium heat and allow it to warm up. Melt butter/ or cooking spray and pour about 1/4 cup of batter over it, spread it evenly. Flip it over when you start to see bubbles forming or pancakes are able to move around the pan, about 1-2 minutes. Cook it for about 1-2 minutes more until golden brown on the other side.

Enjoy with maple syrup and butter if desired!
