Honey Wholewheat Waffles.
The past few weeks saw me out most of the time, either for events, to run errands, or I will be so packed with my orders I can hardly make time to cook out. I know I always say it but I really hate it when I don't get enough rest. But at same time I cannot be more thankful for all these opportunities rollin' in and getting me exposed to more experiences and knowing more people. Thank you Gushcloud for making me part of you guys :)
Many nights before I sleep I have one thousand thoughts running through my head and by the time I want to jot them down, usually I forgot, do you have such experiences too? Monday's dinner with my ex-swimming coach (the one who saw us swimming from Kintergarden days until..now) was a fruitful one. I always learn so much from him when we meet. "So, what are you going to do after you graduate?" - Last year this time I was about to enter the last semester of my university life. I had this written down last year so I can type it out exactly. Great pieces of advice every time we meet. Okay I am going to deviate from waffles a little because I really want to write and share my thoughts, I will get back to them at the end of the post.

He asked me what were my plans after graduation, and I'm like trying to tell him about how I want to continue my business of cake decorating..but I fear... when i said the word 'fear', he immediately stopped me & said, be fearful of nothing. This fear is a negative thought and it will stop you from doing big things in life. 'Thought is a thing', he further explained. "See how these chairs and tables come about? They come from human's thoughts, if people haven't thought about it, how would they be invented? So I say, human's thought controls everything they do; think positively, and positive things will happen."
I'm very sure about this, he wasn't at all preaching. No. He was purely sharing experience of his life and they were all so priceless, and something I will treasure for life. I felt so alive suddenly. Indeed, all things happen for a (good) reason, for this, you have to first believe it's good, and it will end up being good.
"Be confident about yourself and believe that you can do great things, accept feedback, and be the master of everything. You control yourself and the situation around you,for example; if you're in the pool, you're the master of the pool, you control how you swim and not the water control you." Definitely something I need to work on, but yup, he said, "It takes time, don't rush, one day it will happen. Chairs don't immediately pop out right after someone thought about it, do they?"

I always fear growing up, but I forgot that, as we are grow up, we grow wise too. Its all reflected in the wisdom of words from him.
I think it is many undergrads' worry of what to do after graduation and many are unsure. At that point of time I was also clueless, but after about half a year of wondering around and trying so many things with regards to my interest, I can say I have filtered out many question marks I used to have and also lined myself better in knowing what I want to do. Experiences > certificates, honestly. I personally think it is important to do what you love and follow your heart, because when you're passionate about something, you tend to want to do them well, and even better each time you do it.

Time will tell too. That being said, always have a back up plan, just in case..anything. ya' know. Throwing yourself at one thing can be dangerous, especially in Singapore where people with talents/ passion about working out something great are hardly recognised/ agreed by the majority. Sometimes, people here just don't appreciate the work we do, which can be quite a bummer. Meh.
My heart felt so much lighter writing, no wonder I always love writing them. Okay back to the waffles, hee. To be honest, this isn't the kind of waffles I would crave for - not because they ain't good tasting but anyone that knows me would know I prefer crispy waffles as compared to soft doughy ones. I'm new to waffle making, I'm not sure if it is the recipe or is it my waffle machine, will try out other recipes too and experiment more to see if I can get my crispy kind! Okay I am not going to lie.. I forgot to add vanilla extract, haven't noticed much difference from usual waffles I have but would try to add them next time and see what is the difference ;)
oh & some of you guys are asking, my waffle machine is CORNELL WAFFLE MAKER (700W) CWM2308, you can easily get from COURTS at SGD29.90. Value for money!
Honey Wholewheat Waffles
(Recipe adapted from www.natashaskitchen.com. Makes 8 square waffles, each about 5 x 5")
Ingredients
2 large eggs
2 cups whole wheat flour
4 tsp baking powder
1/4 tsp fine sea salt or table salt
1 3/4 cups milk
1/2 cup olive oil/ canola oil/ melted butter
1/2 tsp pure vanilla extract
1 Tbsp honey
Directions
Preheat your waffle machine & whisk the 2 eggs to frothy & bubbly (about a minute).
Sift in the dry ingredients (flour, baking powder, salt) then pour in the wet ingredients (milk, oil, vanilla extract, honey). Whisk them well together and if your mixture is too thick and you don't like it, add a little more milk to adjust the consistency, it should be thick, but flowy too.
For my waffle machine, I can cook 2 square waffles at a time & it only takes about 2 minutes each time..I think, I estimated. I half the recipe because obviously I can't finish all 8, hee.
